4. Drain well

Before draining the pasta, it’s a good idea to reserve a few tablespoons of the cooking water, which could be used to dilute the sauce or to reheat the pasta in a pan. Quickly empty the pasta and cooking water into a colander that you placed in the kitchen sink. Shake to remove the water. You must not rinse the pasta under water, because the starch present on the pasta’s surface helps the sauce to cover it.
