Lemongrass is always very present in Thai cuisine. You can buy it fresh, in the form of a hollow stem, of which only the most tender part is used, after removing the external leaves and the two ends of the stem. If you can’t find it, you can replace it with a mixture of lemon or lime juice and coriander leaves.
Green papaya is the main ingredient in this classic Thai salad. Green papaya doesn’t really have much taste and it’s mostly used because of its texture. It is easily found in Asian grocery stores. Under no circumstances use ripe papaya with orange flesh and black seeds.
This sauce accompanies the characteristic skewers of meat, fish or tofu called “satay”, very common throughout South-East Asia.
