You might already know that sorbet was originally meant to be a palate cleanser between courses, much like pickled ginger. It might not be that strange then, that ice creams are starting to stray into savoury territories. However, some people take it to the extreme, especially in Asia where ingredients we might think of as savoury often find their way into desserts. Corn, red bean, squid ink, and black sesame have all found their way into ice creams. It’s kind of crazy, but strangely delicious.
