I make batches of this recipe when the plums are plentiful: an easy way to keep a taste of summer once the warmth has passed.

This recipe is delicious and so healthy. Many compotes are high in sugar; I appreciate the sparse use of sugar in this (and other SOS recipes.) I added 3/4 tsp of vanilla in addition to the other ingredients. Yum!
My plums were not very ripe, but I simmered them for the specified time then let them sit in the kettle with the heat off for about half hour. Delicious!
