Steak au Poivre, or Pepper Steak, is another classic French recipe that most home cooks are familiar with. Though most people are familiar with black peppercorns, either ground, cracked, or whole, pepper comes in many different varieties. Each variety has its own flavour and they’re excellent for flavouring sauces. Their sweetness and spice work perfectly with the meat.
You may have seen the words “au gratin” on menus before. It refers to how the dish is prepared. Anything can be au gratin, but the technique is most often used with vegetables and tubers. It basically means baked with a crust, which can be a mixture of cheese, breadcrumbs, and herbs. Scalloped potatoes are probably the most popular, but it’s a great technique to use with almost anything, like our Rutabaga and Potato Gratin.
