One of the benefits of vegetarian cuisine is that its dishes do not need to simmer for a long time to develop a rich and deep taste. The ras-el-hanout, a blend of spices from the Maghreb cuisine, gives a special flavor to this dish.
Layers of tortillas with a mixture of peppers, tomato sauce, tofu, and grated cheese, baked in the oven. «Pastel de pobre» or «Torta Azteca» is the name of this tasty Mexican specialty, which is often a creative way to use up whatever is left in the refrigerator. As with many of my Mexican recipes, I owe this one to a fellow student who I met at École Polytechnique, Maria del Pilar.
