All of the five basic flavours – sour, bitter, sweet, pungent, and salty – are found in the five-spice powder, which is one of the pillars of Chinese cooking. The standard blend calls for fennel, cloves, cinnamon, star anise, and Szechuan peppercorns. However, the specific combination used to make up five-spice powder varies, and other spices may be included as well. It can easily be found at local supermarkets.
“Köttbullar” (i.e. meatballs) is a Swedish dish, traditionally served with boiled potatoes and a “lingonberry sauce”, similar to a cranberry sauce. The spice used here is the berry of a pimiento tree. It is aptly named “allspice” because it tastes like a combination of spices, mostly cloves, cinnamon, and nutmeg.
A thick Middle Eastern dip made from mashed chickpeas and «tahini» (sesame seed paste), seasoned with lemon juice, garlic, and olive oil.
Thanks to chickpeas, this recipe is an excellent source of fibre, folic acid, several minerals and vitamins B1, B3 (niacin) and B6.
