Ingredients

2 chicken breasts, boneless, skinless 600 g
1 1/2 tbsp olive oil 23 mL
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]
100 g Oka cheese, or cheddar, sliced
1 pears, peeled, cored, then thinly sliced 150 g

Before you start

Keep the serving plates warm on the stove while you're preparing the dish.

Method

  1. Preheat the oven to 190ºC/375ºF.
  2. Peel and core the pears, then slice them thinly. Set aside.
  3. Cut each whole chicken breast in half lengthwise. Heat the oil in a pan over medium heat. Add the chicken breasts, then sear until golden-brown, about 3 min on each side. Season with salt and pepper. Remove the pan from the heat, then let it rest a few minutes.
  4. Butterfly the chicken breasts by splitting the thickness in half with a cut starting on one side and slicing to almost, but not completely through to the other side. With the butterflied breasts folded back together, insert the cheese and pear slices inside the cut. Lay the chicken breasts in an ovenproof dish along with any of the cooking juices.
  5. Bake in the middle of the oven until the chicken is cooked and the top is browned, 15 min. Serve on the warmed plates.

This was gorgeous! I stuffed it with pears slices, herbes de Provence and Gouda cheese. I also wrapped each breast half in a slice of Rosemary ham before putting it in the oven. Mmmmmm. Will be making this again for sure.

Followed the recipe exactly. Found the chicken to be pretty tasteless - cheese (cheddar) and pear slices didn't lend much flavor. Marinated - it might have a chance.
