Citrus Salsa

In this Mexican-inspired winter salsa, which goes well with grilled meats, instead of the traditional tomatoes, we use citrus fruits. A simple mean to fill up with vitamin C.

Ingredients

1 oranges 180 g
1 grapefruits 300 g
1 shallots, finely chopped 40 g
1 clove garlic, minced
3 tbsp lemon juice, freshly squeezed 1 lemon
1/2 tsp salt 2 g
1/2 cup fresh cilantro 18 g
2 tbsp olive oil 30 mL
1 tsp gingerroot, grated 4 g
2 tsp Harissa paste 9 g
1 tsp ground cumin 3 g
1 tsp honey 7 g
ground pepper to taste [optional]

Method

  1. Cut the orange and grapefruit horizontally then section them, working over a bowl to capture all the juices. Remove the seeds and membranes. Coarsely chop the segments and combine the flesh and juice in the bowl. Set aside.
  2. Meanwhile combine shallot, garlic, lemon juice, and salt in a medium bowl; let stand 10 min (to mellow shallot and garlic).
  3. Mix in the flesh an juice of the citrus fruits. Add cilantro, oil, ginger, harissa, cumin and honey. Season with salt and pepper and mix well.
  4. Serve.
