Macaroons are cookies that are about 3 to 5 cm in diameter, and are crispy on the outside and chewy inside, usually made of almond paste, sugar, and egg whites. Several French cities and regions have their own special "macaron". In this version, almonds are replaced with coconut.

Ingredients

3 egg whites 1/3 cup
salt
3/4 cup icing/confectioners' sugar 100 g
2/3 cup grated coconut 50 g

Before you start

A hand-held or stand mixer will make things easier for this recipe.

Method

  1. Preheat the oven to 150ºC/300ºF. Line a large baking sheet (about 30 x 38 cm) with parchment paper.
  2. In a bowl, using a mixer, beat the egg whites and a pinch of salt until stiff peaks form. Add the sugar gradually, one tablespoon at a time then continue to whip at high speed until the mixture is glossy and the sugar is dissolved, about 7 to 8 min. Fold in the coconut using a spatula.
  3. Using either a pastry bag, or a resealable plastic bag with a corner cut off, or simply a spoon, form small mounds (about a tablespoon of the mixture) then place them on the prepared sheet. Leave about 1 cm of space between the macaroons. The mixture yields about 5 macaroons per egg white.
  4. Bake in the middle of the oven until the macaroons become light-brown coloured and can be removed easily from the paper, about 35-40 min.
  5. Let the macaroons cool down about 30 min before serving.

Observations

These macaroons keep well in an airtight container up to 15 days.
