Irish coffee was created by the bartender of the Shannon Airport, in Ireland, to comfort passengers of early northern transatlantic flights, which were making a mandatory fuelling stop there until the early 1960s. The "Irish fuel" won almost instant renown.

Ingredients

1 cup coffee (liquid), strong 250 mL
1/3 cup whipping cream 35% 85 mL
2 tsp sugar 8 g
2 tbsp whisky 30 mL

Before you start

A mixer will be very useful for this recipe.

This recipe may be prepared also with decaffeinated coffee.

Method

  1. Prepare a very strong coffee (ideally espresso).
  2. Using an electric mixer, whip the cream with the sugar until it just holds stiff peaks.
  3. Pour the whisky into mug(s), or heat-resistant glass(es), then pour in the coffee. Spoon the whipped cream on top. Serve immediately.

Observations

Do not stir after adding the cream, as the true flavour is obtained by drinking the coffee and whisky through the cream.
