Tomato & Cheese Cauliflower Pizza

Ingredients

3 cups cauliflower 500 g
1 clove garlic, minced
2 eggs size large
1/8 tsp salt 0.4 g
1/4 cup My Mother's Tomato Sauce 65 mL
4 anchovy fillets 16 g
2 bocconcini / fresh mozzarella 110 g
ground pepper to taste [optional]
8 leaves fresh basil 4 g

Before you start

A blender or food processor will be very useful.

Method

  1. Preheat the oven to 205°C/400°F. Line a large baking sheet with parchment paper.
  2. Prepare the cauliflower: Cut into florets then transfer to a food processor. Pulse until it is finely chopped. Transfer to a large bowl.
  3. Add the eggs, salt, and minced garlic. Mix well then transfer the mixture to the prepared baking sheet. Use your hands to form it into a pizza crust.
  4. Bake in the middle of the oven until lightly golden, about 20 min. Take out of the oven then top the crust with the tomato sauce, anchovies, and cheese.
  5. Bake for an additional 10-15 min. Garnish with basil leaves then serve.

tastes good and super easy to make. Too moist. Parchment paper gets really soggy underneath and it falls apart easily. Had to eat it with a fork and knife. Definitely will not make this recipe again.
