the sharpness of the vinegrette and creamyness of the goat cheese go really well with the sweet melon. I made this for myself as a late afternoon tide me over to a late supper. I would make it again but probably not for my kids.
I was so happy to find a salad that my kids liked!!! I used mesclun mix instead of arugula because I thought my kids would find it too bitter. It was soooo good! My son does not like tomatoes so watermelon is a great juicy substitute! Of course, I'm a sucker for goat cheese and it was good.
