Shiitake mushrooms are hearty, earthy, and iconic of Japan. You can find them either fresh or dried, and indeed Japanese cooking makes use of both. If you get them dry, they do need to be reconstituted, but the soaking liquid makes for an excellent, flavour broth to add to other dishes for a bit more flavour. This dish is perfect for mushroom lovers.
Many Asian countries make desserts featuring ingredients that we in the West typically consider “savoury.” These include red bean and corn. Matcha, on its own is fairly savoury, but as with any other tea, adding a bit of sugar makes all the difference. It’s an incredibly popular dessert flavour in Japan.
