Ingredients

1 eggs size large
1/3 cup pine nuts 40 g
1/2 cup ricotta cheese 100 g
3/4 cup Gruyère cheese, grated 60 g
4 tbsp bread crumbs 30 g
1 green onions/scallions, finely chopped
1 tbsp chives, fresh, finely chopped 3 g
2 tsp Italian parsley, fresh, finely chopped 4 g
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]
Tabasco sauce to taste [optional]
1/2 tbsp white flour (all purpose) [optional] 4 g
1 tsp canola oil 5 mL

Method

  1. Lightly beat the eggs in a bowl using a fork. Grind the pine nuts using a pepper mill, spice grinder, or food processor, then add them to the bowl. Add the ricotta, grated Gruyère, and bread crumbs. Mix well.
  2. Finely chop the green onions, chives, and parsley, then add them to the mixture. Add a little bit of salt, pepper, and Tabasco sauce to taste. Mix well.
  3. Using floured hands, form the mixture into flat patties (2 per person).
  4. Add the patties to a lightly oiled pan. Cook over medium heat 5 min per side, until golden-brown. Serve immediately.

We both found the taste surprisingly complex - and absolutely delicious! We followed the recipe exactly (though we had no way to grind the pine nuts; I simply minced them).
