Nice bright flavours! Great in winter when you are missing crunchy fresh veg!
I've made this recipe a few times now, and also for guests who have asked for the recipe ! I use goat cheese instead of blue cheese since I don't like blue cheese and it's excellent with the goat cheese (I'm sure if you like blue cheese then it would be great with that as well !).
Use any firm tart apple... We exchanged goat cheese for blue cheese. Delicious!
