Endive and Green Apple Salad with Blue Cheese

Ingredients

1 Belgian endive (Witloof), julienned 150 g
1 apples, green, Granny Smith type, thinly sliced 180 g
2 tbsp Classic Vinaigrette 30 mL
40 g blue cheese, crumbled
1/3 cup walnuts [optional] 35 g
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]

Method

  1. Prepare the Belgian endives, julienne them then put them in a salad bowl.
  2. Thinly slice the apples, then add them to the bowl. Pour in the Classic Vinaigrette, season with salt and pepper, then toss. Crumble the blue cheese then add it to the salad. Garnish with walnuts and serve immediately.

I've made this recipe a few times now, and also for guests who have asked for the recipe ! I use goat cheese instead of blue cheese since I don't like blue cheese and it's excellent with the goat cheese (I'm sure if you like blue cheese then it would be great with that as well !).

Use any firm tart apple... We exchanged goat cheese for blue cheese. Delicious!
