Ingredients

2 avocados, diced 340 g
8 cups mixed greens 200 g
1/4 cup dried goji berries 24 g
1/4 cup pumpkin seeds 30 g
200 g salmon, canned
1/4 cup Miso Dressing 65 mL
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]

Before you start

If goji berries are not available, substitute for dried cranberries.

Method

  1. Dice the avocado. Wash and spin-dry the mixed greens.
  2. Put all the ingredients in a salad bowl or serving plate. Pour in the Miso Dressing. Add salt and pepper to taste then toss.
  3. Serve.
