Ingredients

2 cups frozen peas 260 g
1 Boston lettuce, or curly leaf 200 g
1 onions, coarsely chopped 200 g
2 tbsp butter, unsalted 28 g
1 pinch salt [optional] 0.2 g

Method

  1. Coarsely chop the onion.
  2. Melt the butter in a pot or saucepan over low heat. Add the sliced onion and cook 3-4 min until soft and translucent.
  3. Add the lettuce leaves, tearing the larger ones, then add the frozen peas. Add salt, cover, and cook about 7 min until the peas are soft. Adjust the seasoning then serve.

A great French classic that gives lovely depth and flavour to otherwise boring vegetables. Great for company too.
