A classic French dish, but I've omitted the lard to make it healthier.

Excellent dish!
Very nice dish. I didn't have any 'herbes de provence' but I googled it and just tossed in what ingredients I had on hand. Worked great. We will for sure make this again.
Could this be made in a crockpot?
