Ingredients

1/4 cup butter, unsalted 55 g
1/3 cup brown sugar 80 g
4 peaches, yellow, unpeeled, cut into 8 segments 600 g
1/4 cup Cognac, or Brandy 65 mL

Before you start

A non-stick pan should not be used, as the non-stick coating cannot withstand high temperatures. A stainless steel, enameled cast iron or cast iron skillet are best choices.

Method

  1. In a large skillet, melt the butter with the sugar. Add the peaches and cook for about 2 min over medium-high heat, stirring continuously until they are tender.
  2. Pour the Cognac into the hot skillet, then remove it from below the hood. Flame with a match and wait until the fire goes out.
  3. Serve immediately.

Observations

Flames peaches can be served on pancakes, rice pudding, or ice cream.
