My family loves these! I even got one of the kids declaring her love for zuchinni. I put the chicken in to marinate the night before, and then prep time the next day is quick and easy. Just put on skewers and pop under the broiler until done.
The chicken was moist and flavorful, but my family did not like the zucchini. Next time, I would make sure to buy very young, tender zucchini, which might help the texture.
