The almonds must be blanched in advance.
A mill or food processor will be very useful to finely grind the almonds. A mixer will be very useful to beat the egg whites.

This cake was quite tasty, and decadently rich. A little too sweet for my liking, and you could certainly only have a small piece. However, it was very flavourful, and a big hit with the family. The creme anglais cuts the sweetness, but not the richness. I made it with 3/4 cup of ground almonds instead of grinding my own, and it was a little crumbley and didn't hold a shape well, maybe because of this. When I make it again, I will try it in a square pan and serve it as squares. Nice recipe, I will make it again next apple season!
