Ingredients

3/4 cup almonds, coarsely chopped 100 g
1/4 cup cashews, coarsely chopped 35 g
12 fresh dates, medjool, pit removed 280 g
9 dried apricots, coarsely chopped 1/3 cup
1 tbsp chia seeds 10 g
1/4 cup cocoa powder 22 g
1 tbsp maple syrup 15 mL
2 tbsp water 30 mL

Before you start

A blender or food processor will be very useful to make the meatball mixture.

Method

  1. Put all the ingredients in a food processor. Blend until you have an homogeneous mixture. If mixture is too dry, add a little more water.
  2. Pat mixture into cookie balls and keep in the fridge until needed. Serve 2 cookie balls per person.
