200 g soft tofu 3/4 cup
3/4 cup raspberries, frozen, or strawberries 100 g
1 1/4 tsp vanilla extract 6 mL
1 1/2 tbsp maple syrup 23 mL
2 tbsp lemon juice, freshly squeezed 3/4 lemon
1 tbsp unsweetened coconut flakes [optional] 6 g

Before you start

A blender or food processor will be very useful to blend the tofu and berries.

Method

  1. Put the tofu in a blender. Mix at maximum speed about 1 min until a creamy consistency is obtained.
  2. Add the frozen berries, then mix. Add the vanilla extract, maple syrup, and lemon juice. Mix well. Pour the mixture into individual bowls. Chill the mousse in the refrigerator for about 1 h before serving.
  3. Garnish each serving with coconut flakes and serve.
